The invasion of Mexico in 1521 gave rise to one of the richest cooking revolutions in history. On the past November 8, 1519, Cortez entered Montezuma's capitol was beside with seven thousand native soldiers he had recruited along the way. He was usual by Montezuma and given a great feast, but the pleasant relations between the Spanish captain and the Aztec emperor were short lived. After many bleeding battles, on August 13th 1521, Cortez claimed the capitol.

The conquerors methodically damaged the Aztec territory and replaced it with Spanish structures and also are Institutions, but they not ever succeeded in extinguishing the native civilization and traditions, and which is the still part of Mexico today.
